Jammy Cookie Sandwiches
So it’s that time of year again, cookies, cakes, sugary, glittery goodness! Delicious aromas enveloping your home creating a cosy warm feeling. So get the fireplace going, put your apron on and lets begin!
These, to me say Christmas! Of course the flavour of jam you use is entirely up to you!
425g/15oz flour
75g/3oz sugar
2 tsp vanilla extract
2 tsp lemon zest
4 egg yolks
325g/111/2oz butter,softened
jam
icing sugar for dusting

Preheat your oven to 180C/350F.
Sift the flour into large bowl and to this add the sugar,vanilla extract,lemon zests,egg yolks and butter. Combine this until you have a dough. Lay dough onto some plastic wrap and cover. Flatten with a rolling pin and put into the fridge to chill for about 30 minutes or so.
Lightly flour the surface and add your dough, roll it out until it is about 1/4 inch thick. Take your cookie cutter and cut. When you have finished cutting them all out take half of them and with a smaller cutter make circles in to these so that they end up resembling donuts. Make sure you have enough to top the whole cookies. Lay them out onto a baking tray lined with parchment paper and put into the oven for 8-10 minutes until golden. Transfer them to a wire rack to let cool.
When they are cool spread the jam onto the whole cookies. Take the top cookies and dust them with the icing sugar and carefully lay them on top of the jam.
When they are done they should resemble jewel like discs—- gorgeous to look at as they are to eat! Enjoy!
